I've eaten plenty of sushi, but kimbap, never. What's the difference?[/b]

Well, I'm certainly no expert but Kimbab doesn't have raw fish while sushi does and sushi is japanese and Kimbap is korean.

....That's the best I can say XP

I have only eaten kimbap once. It seemed to be a lot like Japanese "futomaki" - larger-sized rolls that had different vegetables in them, and egg. As rooraa said, they tend not to have raw fish in them (but then again futomaki favors vegetables over raw fish too). Ginger and wasabi were not served with mine - another difference with the Japanese version, I think.

Sushi is a Japanese word. The Korean word 회 means raw fish.

초밥 is the kind where there is some raw fish lying on top of some rice.

Kimbab is rice and some veggies, sometimes meat (ham, tuna etc) rolled up in seaweed. It is like california rolls you can get at japanese restaurants.

Raw fish is 회, or 사시미 (borrowed from Japanese). I think the California roll is about as close to 김밥 as you can get here in the states. When we make 김밥 at home we typically put in some carrot, spinach, pickled radish (단무지), egg and some meat, usually ham or that crab stuff.

My family recipe: put in some 오뎅 pan fried with sugar. My mom's 김밥 is the best in the world.... seriously!

오뎅 has more of a starchy than fishy taste anyway, so I bet that would be pretty good. :D
