In the meantime I will try to help you with these sentences, but I must say that the nuance puzzles me. 혹시 삐쳤어요? The feeling I get from these examples is that you felt ignored by someone. Anyway, the first sentence can be translated in polite
form but I don't think it can sound "polite."
By now, I hope you have realized that I am leaving
(by now - as of this time) 이제 내가 떠나는 것을 아셨으면 좋겠습니다.
..if you meant: "
Bye now. I hope you have realized that I am leaving" (good bye) 내가 떠나는 것을 아셨으면 좋겠습니다. 안녕히 계십시오.
(나라면) 아쉬게도 이제 떠나야지요. 정말 즐거웠습니다. 안녕히 계십시오.

언어를 배우는데 나의 열정을 아셨으면 합니다. or perhaps 언어를 배우는 것에 대한 나의 열정을 인정했으면 좋겠습니다.
(나라면) 나는 외국어를 배우는 것을 무척이나 좋아해요!
Of course there are many ways to translate these same ideas and I only hope a kind native speaker will come along and offer some better suggestions.
